5 bars cream cheese
1 eight ounce container sour cream
Splenda one and one-half cups (or any sugar sub you prefer)
2 teaspoons vanilla
Dash of lemon juice
For crust, butter a Springform pan and sprinkle unsweetened coconut at the bottom. No need to pre-bake.
Make sure your cream cheese is at room temperature. Mix all ingredients until silky smooth.Pour into prepared pan. Wrap pan well in foil. Place pan in water bath into a larger pan and make sure water is half way up the side of the Springform pan. Bake at 325 for one hour. Do NOT open oven door. After the hour, turn off heat and leave in oven for one more hour. This will prevent cracking. Chill and enjoy!
